Celebration Distillation has been making rum in New Orleans, Louisiana since 1995. These are the rums they’re currently producing:
Old New Orleans Crystal Rum, a double pot-distilled, Louisiana molasses-based rum that’s charcoal filtered and diluted down to 80 proof with ionized water before it’s bottled unaged.
Old New Orleans Amber Rum, an aged version of the same base from their Crystal Rum that spends three to seven years in used bourbon barrels at 140-150 proof. It’s bottled blended at 80 proof.
Old New Orleans 121 Crystal Rum, an overproof version of their Crystal Rum that’s only proofed down to 121 proof before bottling.
Old New Orleans Cajun Spice Rum, a spiced version of the same base from their Crystal Rum that’s steeped with cinnamon, nutmeg, allspice, cloves, ginger, vanilla, chicory, and cayenne pepper for four to six weeks before it’s bottled at 80 proof.
