Cotherman Distilling Company has been making rum in Dunedin, Florida since 2017. These are the rums they’re currently producing:
Palmer’s Tropical Silver Rum, a pot- and column-distilled, Florida molasses-based rum that’s bottled unaged at 80 proof. According to the distillery, a slight addition of cane sugar is made before bottling.
Palmer’s Tropical Florida Gold Rum, a blend of rum aged at least two years in once-used whiskey barrels and the distillery’s Silver Rum. Bottled at 80 proof.
Palmer’s Tropical Dark Rum, a version of their Silver Rum with added cane sugar caramel for color. Bottled at 80 proof.
Palmer’s Tropical Spiced Rum, a version of the base used in their Silver Rum with natural spices and house-made dark caramel syrup added. Bottled at 80 proof.
Hotstepper 151 Overproof Rum, a pot- and column-distilled, Florida molasses-based rum that’s bottled unaged at 151 proof.
Palmer’s Tropical Special Edition Barrel Aged Rum, a series of limited edition aged rums featuring a variety of production methods.
Palmer’s Tropical Crockett’s Special Reserve Rum, a pot- and column-distilled, Florida molasses-based rum that’s aged in used whiskey barrels for “a few years” and bottled at 80 proof with no added sweeteners or flavors.
