Holmes Cay Single Cask Rum

Holmes Cay (based in New York) has been releasing rum since 2019, including:

  • Holmes Cay Fiji 2004, a molasses-based, pot-distilled rum distilled at South Pacific Distilleries of Fiji in 2004. It was aged 12 years in the tropics in a used bourbon barrel and an additional 4 years in the UK in American oak barrels. Bottled at cask strength (116 proof) with no added sugar, color, or flavors. 240 bottles.

  • Holmes Cay Guyana Port Mourant Demerara 2005, a molasses-based rum distilled in the Port Mourant double wooden pot still at Demerara Distillers in 2005. It was aged 15 years in the UK in American oak recycled rum barrels and bottled at cask strength (112.8 proof) with no added sugar, color, or flavors. 180 bottles.

  • Holmes Cay Barbados 2005, a blend of molasses-based, pot- and column-distilled rum distilled at Foursquare Rum Distillery in 2005. It was aged 14 years in used bourbon barrels (11 years in the tropics, 3 years in the UK) and bottled at cask strength (approximately 128 proof—two casks were bottled that varied slightly in proof). No added sugar, color, or flavors. 504 bottles.
