Seven Caves Distillery

Seven Caves Distillery has been making rum in San Diego, California since 2018. These are the rums they’re currently producing:

  • Seven Caves Barrel Aged Rum, a hybrid pot/column-distilled, molasses- and cane sugar-based rum that’s aged in new American oak barrels for varying amounts of time and bottled at 80 proof with no added sweeteners. Each release is from a single barrel.

  • Seven Caves Barrel Aged Rum - Limited Release Series, a series of limited releases that features the base used in their Barrel Aged Rum but is then finished in either used bourbon, rye, Madeira, or other casks after the initial aging in new American oak barrels with no added sweeteners. Bottled at 80 proof.

  • Seven Caves Jasmine Tea Rum - Exploratory Series, an “in-house distilled high ester rum” that’s infused with Jasmine tea and bottled unaged at 80 proof.

  • Seven Caves Roasted Peanut Rum - Exploratory Series, a version of the base used in their Barrel Aged Rum that’s aged in new American oak barrels in which roasted peanuts and peanut butter are macerated for an unspecified amount of time. It’s then filtered and bottled at 70 proof.
