South Hollow Spirits

South Hollow Spirits has been making rum in North Truro, Massachusetts since 2012. These are the rums they’re currently producing:

  • Twenty Boat Cape Cod Amber Rum, a double pot-distilled, molasses- and cane juice-based rum that’s proofed down to 115 after distillation and aged in used Chardonnay and used whiskey barrels for two to three-and-a-half years. The aged rums are blended (the Chardonnay barrel aged rums make up a larger portion of the blend) and bottled at 84 proof.

  • Twenty Boat Cape Cod White Rum, a double pot-distilled, cane sugar-based rum that’s bottled unaged at 80 proof.

  • Twenty Boat Cape Cod Spiced Rum, a blend of pot-distilled, molasses-based cane sugar-based rums that’s infused with a blend of locally produced spices that are steeped in the rum in stainless steel tanks for three weeks. Bottled at 95 proof with no artificial flavors or colors.

  • Cask No. 03 Red Port Finish Reserve, a blend of pot-distilled, molasses-based and cane juice-based rums that’s aged a little over five months in red port wine barrels from the distillery’s vineyard and bottled at 98 proof. This is a small batch release.

  • Cask No. 05 White Port Finish Reserve, a blend of pot-distilled, molasses-based and cane juice-based rums that’s aged four to five months in white port wine barrels from the distillery’s vineyard and bottled at 98 proof. This is a small batch release.
