Stark Spirits has been making rum in Pasadena, California since 2013. These are the rums they’re currently producing:
California Silver Rum, a double pot-distilled, molasses- and cane sugar-based rum that’s bottled unaged at 86 proof.
California Silver 151 Rum, an overproof version of the base used in their Silver Rum that’s bottled unaged at 151 proof.
California Gold Rum, an aged version of the base used in their Silver Rum that spends one to two years (until it has “the right color and flavor for our taste,” according to the distillery) in new American white oak barrels. It’s proofed down to 92 proof from its 125 barrel strength before bottling.
